There are four active artisan salt producing regions in France: Guérande, Ile de Noirmoutier, Ile de Ré, and Camargue. The first three are located in central-western France. Guérande and the island of Noirmoutier are on the Atlantic Ocean, near the mouth of the Loire River. This area was settled by the Vikings and used as a base to push further into the Loire valley. It is believed that these Vikings constructed the first artifical salt pans in the area in the 9th or 10th centuries. Ile de Ré is a long, thin island a little bigger than Brooklyn about 60km south of Guérande. Camargue has a different heritage. It is located in southern France, where the Rhone river meets the Mediterranean Sea. Salt has been harvested from the sea at Camargue since at least 400 BC, and was later improved as a saltworks by the Romans. In the Middle Ages, the salt pans were sources of wealth for many Cistercian monks. Today, each area produces its own unique salt using traditional methods. The salts of Guérande are mineral-rich and briny; Noirmoutier fleur de sel has the finest grains; salt from Camargue has the brightest, whitest color. Each is a high quality sea salt with its own character.
