LOC MARIA HISTORY v In 1893, Marie-Catherine Cornic, by forgetting her pancake on the stove, invented the crispy crêpe. Overcooking the pancake gave it a particular texture : rigid but not breakable. v The pancake was then rolled up. This skilful process permits to give to this innovative product lightness and crispiness. v With time, the crispy crêpe became famous in the neighbourhood, in the county, and was getting more and more popular throughout the country. v 1920 : Creation of the GAVOTTES biscuit factory in Quimper in the former area called LOCMARIA (in Brittany, the western part of France).
